Day 3

Did you know you can cook a whole chicken in a slow cooker pot?  Yes!  And, you can cook it from completely frozen, no thawing necessary, in just 4 hours?  Yes!  Really!  Now, it won't get golden brown like it would in an oven, but it comes out juicy and delicious and you'll have some good stuff to use as chicken broth later in the diet.  My mom taught me this secret years ago, and I've used this method ever since because I couldn't cut up a whole chicken to save my life.  All of the details are on the Recipes & Tips tab.

It was a beautiful day today, sunny and almost 85, which is pretty warm for early May.  I got to work outside in the yard and garden while my slow cooker went to work for a simple dinner. 

Breakfast

- Overnight oats with blueberries, drizzled with honey
- 100% white grape juice, no sugar added
- Black coffee


Lunch

- Taco salad (see Day 2).  Since I was almost out of guacamole, I added some extra pineapple tidbits
- Molasses Sugar cookie
- Water


Snack

- Apple with unsalted peanut butter

Dinner

- 3 oz chicken from slow cooker chicken (see Recipes & Tips tab), seasoned with Penzey's Forward! no-salt seasoning
- Sweet potato (discarded the skin), cooked in microwave with unsalted butter and brown sugar
- Frozen peas & carrots, cooked in microwave
- Water
