Day 2

Cooking ahead during the pre-LID preparation really came in handy today.  Most of the meals were heat & eat, with very little cooking except for the pasta and mushrooms for dinner.

Breakfast

- Black coffee
- Overnight Oats with unsalted margarine, maple pecans and a sprinkle of cinnamon


Lunch

- Taco salad with leftovers from Monday's dinner:  lettuce, black beans, corn, Trader Joe's Fire Roasted Salsa, Pineapple Guacamole, seasoned ground turkey
- Molasses Sugar cookie
- Water


Snack

- Apple with Trader Joe's unsalted peanut butter

Dinner

- Pasta (check label for salt & eggs) with homemade sauce from pre-LID preparation (see Recipes & Tips tab for recipe)
- Mushrooms sautéed in a small amount of olive oil and black pepper
- Garlic bread made with homemade bread from pre-LID preparation, unsalted margarine, garlic powder and crushed dried parsley
- Water
