Lunch
I made several extra hard cooked eggs to keep on hand during the week. I learned how to make the perfect hard cooked egg from the Iowa Girl Eats blog. She explains her method in a blog post for a recipe (it's in the middle of the post). You can find it here. If you make several, peel them right away, instead of waiting until you use them. It's much easier to get the shells off.

Snack

black beans (prepared frozen ones from pre-LID preparation, microwaved)

Trader Joe's Fire Roasted Tomato Salsa
Pineapple Guacamole (recipe from the Iowa Girl Eats blog here)
Simple Truth ground turkey
taco seasoning (mix made in the pre-LID preparation)
- Basmati rice (cooking method from the Food Network here)
- Orange slices
- Water
The taco seasoning recipe doesn't include any preparation instructions. I added all of the mix to 1 pound of browned ground turkey, then added 2/3-3/4 cup of water and stirred. I turned the heat down to simmer while I prepared everything else.
